North West Asia:  Location

North West Asia, also known as the Caucasus region, is situated between the Black Sea and the Caspian Sea. The term “Caucasus” originates from the Greek word “Kaukasos”, referring to the mountainous area.

This region comprises Turkey, Georgia, Armenia, and Azerbaijan, bordered by Russia to the north, the Caspian Sea to the east, Iran, Iraq, Syria and Mediterranean Sea to the south, and the Black Sea to the north and north-west.

These countries have stunning mountain landscapes, rich history, and unique cultures. From Georgia’s wine traditions to Armenia’s ancient monasteries and Azerbaijan’s modern Baku, each offers a distinct experience waiting to be explored!

Pulse cultivation

Pulse cultivation is a significant aspect of agriculture in these four countries. In Armenia, pulses like lentils, beans, and chickpeas are staple foods. Turkey is a top exporter of both chickpeas and lentils.

The government supports pulse cultivation through subsidies and training programs.  Azerbaijan produces pulses like chickpeas and beans. In Georgia, while pulses aren’t a major crop, legumes like clover and alfalfa are grown for forage and soil health, contributing to the country’s sustainable agriculture practices.

Pulses and beans are a big part of the cuisine in these countries. In Armenia, lentil soup (apur) and bean stews are popular. Azerbaijan’s dovga is a yogurt-based stew with herbs and sometimes beans. Georgia uses beans in dishes like lobio (bean stew with herbs and spices). These countries incorporate pulses in tasty ways, often with fresh herbs and spices!
