
Urad dal/Matimahor dail is a traditional dish from Assam. Chilka Urad /phala matimah, with white gourd is one of their favourite cuisines.

Chilka urad/phala matimah is the split black gram with the skin on. Urad dal is one of the most common dal in India. It is rich in protein, carbohydrate and fat.

The white gourd is called kumora in Assamese. The tender gourd is called Jali kumora. It is full of nutrients and low in saturated fat. It contains lot of water, therefore it is good for the summer. It is considered as one of the healthiest vegetable.
You need:

125 gm Chilka urad/phala matimah
100 gm Jalikumora
1 tsp ginger juice
1 Tbsp finely chopped onion
3 crushed cloves of garlic
½ tsp of turmeric powder
2 whole + 2 finely chopped green chillies
1 Tbsp of Mustard oil/ light cooking oil
Salt to taste
Method:

- Wash the piece of gourd. Peel and cut it into medium size pieces.
- Cook in the pressure cooker with 1/2 cup of water and ¼ tsp of salt. Switch off the cooker after the 1st whistle. Remove the gourd with the water from the cooker and keep it aside.

3. Wash and cook the dal with 1 cup of water and ½ tsp of salt in the same cooker. After the 1st whistle, reduce the heat to minimum and cook for 2 minutes. Switch off the heat and allow it to cool.
4. Add little water and stir it carefully without mashing the dal.

For tempering:
5. In a heavy pan heat the oil, add onion and the chillies and sauté for a while.
6. Add the garlic. Add ½ tsp of turmeric powder and stir it for few seconds.
7. Pour the cooked dal over the fried spices. Add the gourd pieces with the water.
8. Add ½ cup of warm water to the dal and bring it to boil. Adjust the salt. Simmer dal till done.
9. Add the ginger juice and stir well. Switch off the heat.
10. Serve hot with cooked rice.
